Ingredients:
- wholemeal bread
- 200 g cannellini beans
- 1 garlic clove
- San Marzano tomatoes
- salt-packed capers
- 1 lemon
- 1 teaspoon tahini (sesame seed paste)
- salt to taste
- Ménage à Trois – Emozioneolio extra virgin olive oil
Preparation:
- Place the beans, well drained of their preserving liquid, in a food processor. Add salt, one garlic clove, the juice of a slice of lemon, tahini and plenty of extra virgin olive oil.
- Blend to a smooth, even cream.
- Chop the tomatoes into small pieces and combine with the capers, rinsed to remove their preserving salt.
- Toast the bread well to make the crostino.
- Finish with a generous spoonful of bean cream, the tomatoes and capers, and a generous drizzle of our Ménage à Trois extra virgin olive oil before serving.
