Ingredients for 2 people:
- 4 slices chicken breast
- 1 yellow pepper
- 2 courgettes
- 3 carrots
- half an onion
- 1 lime
- soy sauce
- Emozioneolio – OPUS blend
- poppy or sesame seeds
Preparation:
- Cut the chicken breast into strips and leave to marinate in the juice of 1 lime.
- Thinly slice the vegetables and put them in a wok with a drizzle of Emozioneolio extra virgin olive oil.
- Cook over high heat for about 10 minutes, moving the vegetables around the wok to prevent sticking.
- Make an emulsion of soy sauce and Opus blend oil (70% soy sauce, 30% extra virgin olive oil).
- Pour some of the emulsion over the vegetables and cook for a few more minutes.
- When the vegetables are cooked but still crisp, remove from the wok and put on a serving plate.
- Cook the chicken in the wok with its marinade, moving it frequently to prevent sticking.
- After 5 minutes, add the remaining sauce and oil emulsion and cook for another 2/3 minutes.
- Combine the chicken and vegetables on the serving plate, add poppy or sesame seeds and Opus blend extra virgin olive oil before serving.
